Ingredients
  

1 lb shrimp, peeled and deveined

1 cup sushi rice

2 cups water

1/4 cup rice vinegar

1 tablespoon sugar

1 teaspoon salt

1 tablespoon sriracha sauce

1 tablespoon mayonnaise (preferably Kewpie mayo)

1 avocado, sliced

1 cucumber, thinly sliced

1/4 cup tempura crumbs (for crunch)

2 tablespoons soy sauce (for dipping)

1 green onion, finely chopped (for garnish)

Sesame seeds (for garnish)

Nori sheets, cut into strips (optional)

Instructions
 

Cook the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. In a pot, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce to low heat, cover, and simmer for about 20 minutes or until the water is absorbed.

    Season the Rice: In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow it to cool slightly.

      Prepare the Shrimp: In a skillet over medium heat, add a splash of oil. Add the cleaned shrimp and cook until they turn pink and opaque, about 3-4 minutes. Stir in sriracha and mayo, mixing well until the shrimp are evenly coated. Remove from heat.

        Assemble the Sushi Stacks: Using a round cutter or a small cup as a mold, start with a layer of sushi rice at the bottom, pressing down gently to create a solid base. Follow with a layer of the spicy shrimp mixture, then a layer of avocado slices, and a layer of cucumber. Repeat the layering process until you reach the top of the mold.

          Finalize the Stacks: Carefully remove the mold by lifting it straight up. Top each sushi stack with a sprinkle of tempura crumbs, sesame seeds, and chopped green onion. If desired, add strips of nori around the stack for decoration.

            Serve: Arrange the sushi stacks on a serving platter. Serve with soy sauce on the side for dipping.
