Ingredients
  

  • 1 pound boneless, skinless chicken thighs cut into bite-sized pieces
  • 1/4 cup soy sauce low sodium recommended
  • 1/4 cup honey for sweetness
  • 1 tablespoon rice vinegar for acidity
  • 1 tablespoon sesame oil
  • 2 teaspoons cornstarch for thickening sauce
  • 3 cloves garlic minced
  • 1 cup broccoli florets fresh or frozen
  • 2 cups cooked jasmine rice or any preferred rice
  • 1/2 cup sliced green onions for garnish
  • salt and pepper to taste

Instructions
 

  • In a large bowl, combine the soy sauce, honey, rice vinegar, sesame oil, and minced garlic to create the marinade. Mix well and add the chicken pieces, ensuring they are evenly coated. Let marinate for 10 minutes.
  • Heat a large skillet over medium-high heat and add a drizzle of oil. Once hot, add the marinated chicken along with the marinade. Cook for about 5-7 minutes until the chicken is browned and cooked through, stirring occasionally.
  • Sprinkle the cornstarch over the chicken and stir to combine. Cook for an additional 2-3 minutes until the sauce thickens and becomes sticky. Add the broccoli florets and cook until they are vibrant and tender, about 3-4 minutes.
  • To serve, divide the cooked jasmine rice into bowls. Top with the sticky chicken and broccoli mixture. Garnish with sliced green onions and additional sesame seeds if desired.

Tip 1: For extra flavor, add a splash of sriracha or chili flakes to the marinade for a spicy kick.
Tip 2: This dish can be made ahead; just store the chicken and sauce separately in the fridge for up to 2 days.
