Tofu, often referred to as bean curd, is a food made from soybeans that has been consumed for centuries, particularly in Asian cuisine. Originating in China over 2,000 years ago, tofu has evolved into a versatile ingredient available worldwide. It is made by coagulating soy milk and pressing the resulting curds into solid blocks. The texture of tofu can vary widely depending on the type, which is generally categorized into silken, soft, firm, and extra-firm. Each type of tofu serves different culinary purposes, with firm and extra-firm varieties being ideal for stir-frying and grilling due to their ability to hold shape well.

Ingredients

1 block firm tofu, pressed and cubed

3 tablespoons soy sauce

2 tablespoons maple syrup

1 tablespoon rice vinegar

1 tablespoon sesame oil

2 teaspoons cornstarch

2 tablespoons vegetable oil

1 cup cooked brown rice

1 cup broccoli florets

1 carrot, julienned

1 bell pepper, sliced

2 green onions, chopped

Sesame seeds for garnish

Optional: Red pepper flakes for heat

Instructions

Prepare the Tofu: Press the tofu for at least 30 minutes to remove excess moisture. Once pressed, cut the tofu into bite-sized cubes.

Marinade Preparation: In a bowl, whisk together soy sauce, maple syrup, rice vinegar, sesame oil, and cornstarch until smooth.

Marinate the Tofu: Place the cubed tofu into the marinade, ensuring each piece is well-coated. Let it marinate for about 20-30 minutes.

Cook the Vegetables: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the broccoli, carrot, and bell pepper. Sauté for about 5-7 minutes, or until vegetables are tender but still crisp. Remove from skillet and set aside.

Cook the Tofu: In the same skillet, add the remaining tablespoon of vegetable oil. Heat over medium-high heat. Carefully place the marinated tofu cubes into the skillet, shaking off excess marinade. Cook for about 10-12 minutes, turning occasionally until golden and crispy.

Glaze the Tofu: Once the tofu is crispy, pour the remaining marinade over the tofu in the skillet. Cook for an additional 3-5 minutes, stirring frequently, until the sauce thickens and coats the tofu.

Assemble the Bowl: Divide the cooked brown rice among bowls. Top each with a generous portion of the sticky glazed tofu, sautéed vegetables, and a sprinkle of green onions. Garnish with sesame seeds and, if desired, a pinch of red pepper flakes for extra heat.

Serve and Enjoy: Serve the bowls warm and enjoy a tasty, nutritious meal!
