1 cup graham cracker crumbs

1/2 cup unsalted butter, melted

2 tablespoons sugar

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup heavy whipping cream

1 cup fresh strawberries, diced

1/4 cup strawberry jam

1 cup crushed cornflakes

Additional strawberries for garnish

Prepare the crust: In a bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press the mixture into the bottom of silicone molds or a mini muffin tin to form mini crusts. Freeze for 15 minutes to set.

    Make the cheesecake filling: In a mixing bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing until well combined and creamy.

      Whip the cream: In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth and fully combined.

        Combine strawberries: Gently fold diced strawberries and strawberry jam into the cheesecake mixture, ensuring it’s evenly distributed.

          Assemble the bites: Remove the crusts from the freezer. Spoon the cheesecake filling into the chilled crusts, filling them to the top. Tap the molds gently on the counter to smooth the surface.

            Add the crunch: In a separate bowl, combine the crushed cornflakes with a bit of melted butter and sugar for sweetness. Sprinkle the cornflake mixture generously on top of the cheesecake filling in each bite.

              Chill: Place the filled molds back into the freezer for at least 2 hours, or until fully set.
