Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

3 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup chocolate chips (optional)

8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1/2 cup fresh strawberries, hulled and diced (plus extra for garnish)

Instructions
 

Prepare the Cheesecake Filling:

    - In a mixing bowl, beat the softened cream cheese until smooth.

      - Add the powdered sugar and vanilla extract, mixing until well combined.

        - Gently fold in the diced strawberries. Set aside.

          Make the Cookie Dough:

            - In a large bowl, beat the softened butter, granulated sugar, and brown sugar until creamy.

              - Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

                - In a separate bowl, whisk together the flour, baking soda, and salt.

                  - Gradually add the dry ingredients to the butter mixture, mixing until just combined. If desired, fold in chocolate chips.

                    Chill the Dough:

                      - Cover the cookie dough with plastic wrap and refrigerate for about 30 minutes to 1 hour. This helps the cookies hold their shape.

                        Assemble the Cookies:

                          - Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

                            - Take a tablespoon-sized amount of cookie dough and flatten it into a disc.
