Ingredients
  

1 cup all-purpose flour

1/4 cup granulated sugar

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 cup buttermilk

1/4 cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

1/2 cup cream cheese, softened

1/4 cup powdered sugar

1/4 cup fresh strawberries, finely chopped

1 teaspoon lemon juice

Oil for frying

Extra granulated sugar and cinnamon for coating

Instructions
 

Prepare Dough: In a medium bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon. Set aside.

    Mix Wet Ingredients: In another bowl, combine buttermilk, melted butter, egg, and vanilla extract. Mix well until combined.

      Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix until just combined. Do not over-mix; the dough should be slightly lumpy.

        Chill: Cover the bowl with plastic wrap and chill the dough in the refrigerator for about 30 minutes.

          Prepare Filling: While the dough is chilling, make the cheesecake filling. In a medium bowl, beat together the softened cream cheese, powdered sugar, chopped strawberries, and lemon juice until smooth. Refrigerate until ready to use.

            Heat Oil: In a deep pan or pot, heat oil over medium-high heat until it reaches 350°F (175°C).

              Shape Donut Holes: Take the chilled dough out and use a small cookie scoop or your hands to form small balls (about 1 inch in diameter). Make a small indentation in the center of each ball and place about 1/2 teaspoon of the cream cheese filling in the center. Pinch the dough around the filling to seal it and roll it gently to form a smooth ball.

                Fry Donut Holes: Carefully place the stuffed donut holes into the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes on each side or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.

                  Coat: In a shallow bowl, mix together extra granulated sugar and cinnamon. While still warm, roll each donut hole in the sugar mixture to coat.

                    Serve: Allow to cool slightly before serving. The donut holes can be enjoyed warm or at room temperature. Drizzle with melted chocolate or serve with a side of fresh whipped cream if desired.
