Strawberry Cheesecake Truffle Balls

Ingredients
  

1 cup fresh strawberries, pureed

8 oz cream cheese, softened

1/4 cup powdered sugar

1 tsp vanilla extract

1 cup graham cracker crumbs

1/4 cup mini chocolate chips (optional)

8 oz white chocolate, melted

Pinch of salt

Fresh strawberries, for garnish

Instructions
 

In a medium bowl, combine the fresh strawberry puree, softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and well incorporated.

    Gradually fold in the graham cracker crumbs until the mixture resembles a thick dough. If desired, add mini chocolate chips for extra texture and flavor.

      Cover the mixture and refrigerate for about 30 minutes to firm up.

        Once chilled, scoop out tablespoon-sized portions of the mixture and roll them into balls. Place them on a baking sheet lined with parchment paper.

          Freeze the truffle balls for at least 30 minutes until firm.

            While the truffles are freezing, melt the white chocolate in a microwave-safe bowl in short bursts (15-20 seconds), stirring in between until smooth.

              Dip each chilled truffle ball into the melted white chocolate, using a fork to help coat it evenly. Allow excess chocolate to drip off before placing back on the parchment paper.

                If desired, sprinkle a little graham cracker crumb on top of the dipped truffles before the chocolate sets, for decoration.

                  Once all truffles are coated, refrigerate them for at least 20 minutes or until the chocolate hardens completely.

                    Garnish with fresh strawberries before serving.
