Strawberry Cheesecake Truffle Balls

Ingredients
  

1 cup fresh strawberries, hulled and chopped

8 oz cream cheese, softened

1/2 cup powdered sugar

1/2 teaspoon vanilla extract

1 cup crushed graham crackers

1/2 cup white chocolate chips

1 tablespoon coconut oil (optional, for melting chocolate)

Extra crushed graham crackers for rolling

Instructions
 

In a small saucepan, heat the chopped strawberries over low heat, stirring occasionally until they break down into a sauce, about 5-7 minutes. Remove from heat and let cool completely.

    In a mixing bowl, beat the softened cream cheese with an electric mixer until smooth.

      Add the cooled strawberry sauce, powdered sugar, and vanilla extract to the cream cheese. Mix until well combined and creamy.

        Fold in the crushed graham crackers until evenly mixed.

          Refrigerate the mixture for about 30 minutes to firm up, making it easier to shape.

            Once firm, use a small cookie scoop or your hands to form the mixture into bite-sized balls (approx. 1 inch in diameter).

              Place the truffle balls on a parchment-lined baking sheet and freeze for about 15 minutes.

                While the truffles are freezing, melt the white chocolate chips with coconut oil (if using) in a microwave-safe bowl, stirring every 30 seconds until smooth.

                  Dip each truffle ball in the melted white chocolate, allowing any excess to drip off, then roll in extra crushed graham crackers for coating.

                    Return the coated truffles to the baking sheet and refrigerate for another 15-20 minutes to set the chocolate.

                      Serve chilled and enjoy!
