Ingredients
  

1 cup fresh strawberries, hulled and finely chopped

8 oz cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup crushed graham crackers

1/4 cup white chocolate chips

1/4 cup dark chocolate chips

1 tablespoon coconut oil (for melting chocolate)

Extra crushed graham crackers, for rolling

A pinch of salt

Instructions
 

Prepare the Strawberries: In a small bowl, mix the finely chopped strawberries with a pinch of salt. This helps to enhance their natural sweetness. Set aside for about 10 minutes to let the juices develop.

    Make the Cheesecake Mixture: In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Use a hand mixer or whisk to blend until the mixture is smooth and creamy.

      Add Strawberries: Gently fold in the macerated strawberries into the cheesecake mixture until evenly distributed.

        Form the Balls: Stir in the crushed graham crackers until the mixture is thick enough to handle. Use your hands to scoop out about a tablespoon of the mixture and roll it into a ball. Place on a baking sheet lined with parchment paper. Repeat with the remaining mixture until all are formed.

          Chill: Place the truffle balls in the refrigerator for at least 30 minutes to set-up.

            Melt the Chocolate: In a microwave-safe bowl, combine the white chocolate chips with 1 tablespoon of coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth. Repeat with the dark chocolate chips in another bowl.

              Coat the Truffles: Once the balls are firm, dip them into the melted white chocolate first, letting the excess drip off. While the coating is still wet, roll them in extra crushed graham crackers for a crunchy finish. Allow them to set on the parchment-lined baking sheet.

                Decorate: Drizzle the dark chocolate over the truffle balls for an elegant touch. Let the drizzled chocolate harden slightly before serving.
