1 cup almond milk (or any plant-based milk)

1/4 cup chia seeds

2 tablespoons maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 cup fresh strawberries, hulled and diced

1/2 cup granola (your favorite blend)

1 tablespoon coconut oil (melted)

1 teaspoon cinnamon

A pinch of salt

In a mixing bowl, combine almond milk, chia seeds, maple syrup, vanilla extract, and a pinch of salt. Whisk well to ensure the chia seeds are evenly distributed.

    Let the mixture sit for about 5 minutes, then whisk again to prevent clumping. Cover and refrigerate for at least 2 hours, or overnight, until it thickens to a pudding-like consistency.

      While the chia pudding is chilling, prepare the crumble topping. In a separate bowl, combine the granola, melted coconut oil, and cinnamon. Mix until the granola is coated with the oil and cinnamon.

        Preheat the oven to 350°F (175°C). Spread the crumble mixture on a baking sheet and bake for about 10-12 minutes until golden and fragrant. Keep an eye on it to prevent burning. Remove from the oven and let it cool.

          Once the chia pudding has set, layer it in individual bowls or jars with the diced strawberries and the baked granola crumble. Start with a layer of chia pudding, followed by strawberries, then a sprinkle of granola, and repeat until your containers are filled.

            Top with a few extra strawberry slices and a light drizzle of maple syrup for extra sweetness if desired.
