1 ½ cups crushed vanilla wafer cookies

½ cup unsalted butter, melted

¼ cup granulated sugar

16 oz cream cheese, softened

1 cup granulated sugar

1 tsp vanilla extract

3 large eggs

1 cup sour cream

1 cup fresh strawberries, pureed

For the strawberry crunch topping:

1 cup crushed strawberry-flavored cereal (like Crunch Berries)

3 tbsp unsalted butter, melted

2 tbsp granulated sugar

For garnish:

Fresh strawberries, sliced

Whipped cream (optional)

Instructions
 

Prepare the crust:

    - Preheat your oven to 325°F (165°C).

      - In a mixing bowl, combine crushed vanilla wafers, melted butter, and sugar. Mix until well combined.

        - Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove from oven and set aside to cool.

          Make the cheesecake filling:

            - In a large mixing bowl, beat the softened cream cheese until smooth and creamy, about 2-3 minutes.

              - Gradually add sugar and vanilla extract, continuing to beat until fully incorporated.

                - Add one egg at a time, mixing well after each addition. Do not overmix.

                  - Stir in the sour cream until just combined.

                    - Gently fold in the pureed strawberries until the mixture is uniform in color.

                      Assemble the cheesecake:

                        - Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula.

                          - Bake in the preheated oven for about 55-60 minutes, or until the center is set and only slightly jiggly.

                            - Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour to prevent cracking.

                              Prepare the strawberry crunch topping:

                                - In a bowl, mix together the crushed strawberry-flavored cereal, melted butter, and sugar until well combined.

                                  - Spread the mixture evenly over the cooled cheesecake.
