Ingredients

2 cups fresh strawberries (hull and sliced)

1 cup coconut milk (canned or carton)

1/2 cup pineapple juice

1/4 cup granulated sugar (or to taste)

1 tbsp lime juice (freshly squeezed)

2 cups diced frozen pineapple

A pinch of salt

Instructions

Begin by placing the fresh strawberries in a blender. Blend until smooth, then set aside.

In the same blender, combine the coconut milk, pineapple juice, granulated sugar, lime juice, and a pinch of salt. Blend until the mixture is well combined and the sugar is fully dissolved.

Add the frozen pineapple to the blender and blend again until the mixture is creamy and smooth.

Gently fold in the blended strawberries into the creamy pineapple mixture until fully incorporated but still swirled together for a marbled effect.

Transfer the mixture into a piping bag or a large resealable plastic bag (cut a corner off).

Pipe the Dole Whip into serving bowls or cups, creating a soft-serve look.

Optionally, garnish with fresh strawberry slices or a sprig of mint.
