Ingredients
  

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

2 cups fresh strawberries, hulled and sliced

1 cup powdered sugar

1 (8 oz) package cream cheese, softened

1 teaspoon vanilla extract

1 cup heavy whipping cream

½ teaspoon gelatin (optional)

Fresh strawberries and mint leaves for garnish

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are well-coated.

      - Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake for 8-10 minutes or until lightly golden. Remove from the oven and let it cool completely.

        Make the Strawberry Filling:

          - In a medium bowl, combine the sliced strawberries with powdered sugar. Let this mixture sit for about 15-20 minutes to allow the strawberries to release their juices.

            Prepare the Cream Cheese Mixture:

              - In another bowl, beat the softened cream cheese and vanilla extract until smooth and creamy. You can use an electric mixer for this step.

                Whip the Cream:

                  - In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

                    Combine and Chill:

                      - Gently fold the macerated strawberries (with their juices) into the cream cheese mixture. If you want a firmer pie, you can sprinkle gelatin over the strawberry mixture and stir until dissolved before combining with the cream cheese.

                        - Pour the strawberry and cream cheese filling into the cooled graham cracker crust. Smooth out the top with a spatula.

                          Chill:

                            - Cover the pie and refrigerate for at least 4 hours or until set. For best results, chill overnight.

                              Serve:

                                - Once set, slice the pie, garnish with fresh strawberries and mint leaves, and serve chilled. Enjoy the refreshing flavor of summer!
