Ingredients

1 cup fresh strawberries, hulled and sliced

1 cup water

1 cup cold water

1 (3 oz) package of strawberry-flavored Jell-O

1 cup Cool Whip (thawed)

1/2 cup granola or crushed graham crackers (for crunch)

Fresh mint leaves (for garnish, optional)

Instructions

In a saucepan, bring 1 cup of water to a boil over medium heat. Once boiling, remove from heat and stir in the strawberry Jell-O powder until fully dissolved.

Add 1 cup of cold water to the dissolved Jell-O and stir until well combined. Pour the mixture into a medium-sized bowl and refrigerate for about 2-3 hours, or until fully set.

Once the Jell-O is set, use a fork to gently break it into small cubes.

In a clear glass or parfait dish, start by layering 1/4 cup of the Jell-O cubes at the bottom.

Next, add a generous layer (about 1/3 cup) of sliced strawberries over the Jell-O.

Spoon 1/4 cup of Cool Whip over the strawberries, spreading it gently.

Add a layer of granola or crushed graham crackers for some crunch.

Repeat the layers until you reach the top of the glass, finishing with a layer of Cool Whip and a few additional strawberry slices for garnish.

Top with a fresh mint leaf if desired, and serve immediately or refrigerate until ready to enjoy.
