Ingredients

1 cup (2 sticks) unsalted butter, melted

1 ½ cups brown sugar, packed

2 large eggs

2 teaspoons vanilla extract

1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

Zest of 1 lemon

½ cup fresh strawberries, chopped

¼ cup lemon juice (freshly squeezed)

½ cup white chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease or line a 9x9-inch (or 8x8-inch) baking pan with parchment paper, letting the edges overhang for easy removal.

Mix Wet Ingredients: In a large bowl, combine the melted butter and brown sugar. Mix well until smooth. Add the eggs one at a time, stirring after each addition to combine fully. Then, mix in the vanilla extract and lemon juice.

Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, salt, and lemon zest until evenly combined.

Combine Mixtures: Gradually fold the dry ingredients into the wet mixture using a spatula, being careful not to overmix. The batter should be thick.

Add Strawberries: Gently stir in the chopped strawberries and white chocolate chips (if using) until evenly distributed throughout the batter.

Bake: Pour the batter into the prepared baking pan, spreading it evenly. Bake in the preheated oven for 25-30 minutes, until the edges are set and a toothpick inserted into the center comes out with a few moist crumbs.

Cool and Cut: Allow blondies to cool in the pan on a wire rack for about 10 minutes. Then lift them out using the parchment paper and let cool completely before slicing into squares.

Serve and Enjoy: Serve as is or dust with powdered sugar for an elegant touch. Enjoy your delicious Strawberry Lemon Blondies!
