1 cup fresh strawberries, pureed (about 8 medium strawberries)

1 cup granulated sugar, divided

1/2 cup unsalted butter, softened

2 large eggs

1 tablespoon lemon zest

1/4 cup freshly squeezed lemon juice

1 1/2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup buttermilk

1 teaspoon vanilla extract

1 cup powdered sugar (for frosting)

2 tablespoons lemon juice (for frosting)

Fresh strawberries and lemon slices for garnish

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.

    Make Strawberry Puree: In a blender, puree fresh strawberries until smooth. Measure out 1 cup for the cake and set aside.

      Cream the Butter and Sugar: In a large bowl, cream together the softened butter and 3/4 cup of granulated sugar until light and fluffy, approximately 3-4 minutes.

        Add Eggs and Flavors: Beat in the eggs one at a time, mixing well after each addition. Stir in the lemon zest, lemon juice, and the strawberry puree until combined.

          Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.

            Mix Dry and Wet Ingredients: Gradually add the dry ingredients to the strawberry mixture, alternating with the buttermilk. Start and end with the dry ingredients. Mix until just combined and do not overmix.

              Pour and Bake: Divide the batter evenly between the prepared cake pans and smooth the tops. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.

                Cool the Cakes: After baking, let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

                  Prepare the Frosting: In a bowl, whisk together the powdered sugar and the 2 tablespoons of lemon juice until smooth. Adjust the consistency if necessary, adding more lemon juice or powdered sugar as needed.

                    Assemble the Cake: Once the cakes are completely cool, place one layer on a serving plate and spread a layer of frosting on top. Place the second layer on top and frost the top and sides of the cake.
