Ingredients
  

  • 1 cup fresh strawberries hulled and sliced
  • 1/4 cup fresh lime juice about 2 limes
  • 1/4 cup simple syrup made with equal parts sugar and water
  • 1 cup club soda chilled
  • 1/4 cup fresh mint leaves lightly bruised
  • 1 tablespoon lime zest for garnish
  • 1 tablespoon granulated sugar for rim, optional
  • 2 slices lime for garnish
  • 1 cup ice cubes for serving

Instructions
 

  • In a mixing glass, combine the sliced strawberries, fresh lime juice, and simple syrup. Muddle gently with a muddler or the back of a spoon until the strawberries release their juices and are well combined with the lime and syrup.
  • Add the bruised mint leaves to the mixture and muddle lightly to release the mint oils, being careful not to shred the leaves. This will enhance the flavor of the drink.
  • Fill four serving glasses with ice cubes. Divide the strawberry-mint mixture among the glasses, filling each about halfway.
  • Top each glass with chilled club soda, stirring gently to combine. If desired, rim the glasses with granulated sugar before serving for an extra touch of sweetness.
  • Garnish each mocktail with a slice of lime and a sprinkle of lime zest for added flair and aroma. Serve immediately and enjoy!

Notes

Tip 1: For a less sweet mocktail, reduce the amount of simple syrup or use agave syrup.
Tip 2: This drink can be made ahead of time by preparing the strawberry and mint mixture and storing it in the refrigerator; add soda just before serving.
