2 cups fresh strawberries, hulled and chopped

1/4 cup granulated sugar

1 teaspoon lemon juice

1 cup heavy cream, chilled

1 teaspoon vanilla extract

2 tablespoons powdered sugar

1 tablespoon gelatin powder (optional)

2 tablespoons cold water (for gelatin)

Prepare the Strawberries: In a blender or food processor, combine the chopped strawberries, granulated sugar, and lemon juice. Blend until smooth. If you prefer a chunkier texture, reserve some strawberry pieces and stir them in later.

    If using gelatin: In a small bowl, sprinkle gelatin over cold water and let it sit for 5 minutes to bloom. Then, gently heat it in the microwave for about 10 seconds until dissolved. Allow it to cool slightly before mixing with the strawberry puree.

      Combine Mixtures: Pour the strawberry puree (and dissolved gelatin, if used) into a large mixing bowl. Stir gently to combine.

        Whip the Cream: In a separate mixing bowl, using an electric mixer, whip the heavy cream with vanilla extract and powdered sugar on medium speed until soft peaks form. Be careful not to over-whip—it should be fluffy and smooth.

          Fold Together: Gently fold the whipped cream into the strawberry mixture using a spatula. Start by adding a small portion of the whipped cream to lighten the strawberry puree, then gradually fold in the remaining whipped cream until no white streaks remain.

            Chill Mousse: Spoon the mousse into individual serving dishes or a large bowl. Cover with plastic wrap and refrigerate for at least 2 hours or until set.

              Serve: Once set, serve the strawberry mousse chilled. Garnish with extra strawberries, mint leaves, or a dollop of whipped cream if desired.
