Strawberry Mousse with Strawberry Sauce

For the Strawberry Mousse:

2 cups fresh strawberries, hulled and sliced

1/2 cup granulated sugar, divided

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 cup heavy cream

2 teaspoons powdered gelatin

3 tablespoons cold water

For the Strawberry Sauce:

1 cup fresh strawberries, hulled and quartered

1/4 cup granulated sugar

1 tablespoon lemon juice

Instructions
 

Prepare the Strawberry Mousse:

    - In a blender, combine 2 cups of sliced strawberries, 1/4 cup sugar, lemon juice, and vanilla extract. Blend until smooth.

      - In a small bowl, sprinkle gelatin over 3 tablespoons of cold water and let it bloom for about 5 minutes.

        - Heat the gelatin mixture in the microwave for about 10 seconds until just melted, then stir it into the strawberry puree until fully combined.

          - In a separate mixing bowl, whip the heavy cream with the remaining 1/4 cup sugar until soft peaks form.

            - Gently fold the strawberry mixture into the whipped cream until well combined, being careful not to deflate the cream too much.

              - Spoon the mousse into serving glasses and refrigerate for at least 4 hours or until set.

                Prepare the Strawberry Sauce:

                  - In a small saucepan, combine the quartered strawberries, 1/4 cup sugar, and lemon juice.

                    - Cook over medium heat until the strawberries soften and release their juices (about 5-7 minutes). Stir occasionally.

                      - Once cooked, remove from heat and allow to cool slightly. Blend or mash the sauce to your desired consistency, then let it cool completely.

                        Assemble:

                          - Once the mousse is set, top each serving with a generous drizzle of the strawberry sauce. Garnish with whole strawberries or mint leaves if desired.
