For the Filling:

2 cups fresh strawberries, hulled and sliced

2 cups rhubarb, chopped into 1/2 inch pieces

3/4 cup granulated sugar

1/4 cup cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract

For the Crust and Crumb Topping:

2 1/2 cups all-purpose flour

1 cup old-fashioned oats

1 cup brown sugar, packed

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup cold unsalted butter, cut into cubes

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan or line it with parchment paper for easy removal.

    Prepare the Filling: In a large mixing bowl, combine the sliced strawberries, chopped rhubarb, granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss everything together until the fruit is well coated. Set aside.

      Make the Crust and Crumb Topping: In another bowl, mix the flour, oats, brown sugar, baking powder, baking soda, and salt. Add the cold cubed butter to the mixture and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

        Assemble the Bars: Press about 2/3 of the crumb mixture into the bottom of the prepared pan to form a crust. Pour the fruit filling over the crust and spread it evenly. Finally, sprinkle the remaining crumb topping over the fruit layer.

          Bake: Bake in the preheated oven for 40-45 minutes, or until the top is golden and the filling is bubbly.

            Cool and Serve: Once baked, remove the bars from the oven and allow them to cool completely in the pan on a wire rack. Once cooled, cut into squares or bars and serve.
