2 cups fresh strawberries, hulled and halved

2 cups rhubarb, diced

1 cup granulated sugar

1/4 cup cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1 tablespoon unsalted butter, cut into small pieces

1 pre-made pie crust (9-inch), or your favorite homemade pie dough

1 egg, beaten, for egg wash

Turbinado sugar, for sprinkling on top

Instructions
 

Preheat Oven: Preheat your oven to 425°F (220°C).

    Prepare Filling: In a large mixing bowl, combine the fresh strawberries and rhubarb. Sprinkle the granulated sugar, cornstarch, lemon juice, vanilla extract, ground cinnamon, and salt over the fruit. Gently toss to coat, and let it sit for about 15 minutes to macerate.

      Prepare Pie Crust: Roll out your pie crust if using homemade dough. Place the bottom crust in a 9-inch pie plate, pressing it evenly against the edges.

        Fill Pie: Pour the strawberry-rhubarb mixture into the prepared crust. Dot the top with small pieces of butter.

          Top Crust: If you have remaining dough, roll it out and place it over the top, or create a lattice design. If using a solid top crust, make a few slits for steam to escape. Fold and crimp the edges to seal the pie.

            Egg Wash: Brush the top crust with the beaten egg and sprinkle with a little turbinado sugar for a crunchy top.

              Bake: Place the pie on a baking sheet (to catch any drips) and bake in the preheated oven for 15 minutes. Lower the temperature to 350°F (175°C) and continue baking for an additional 30-40 minutes, or until the filling is bubbling and the crust is golden brown.

                Cool: Once baked, remove from the oven and let the pie cool on a wire rack for at least 1 hour to allow the filling to set.
