Ingredients

1 cup fresh strawberries, hulled and sliced

1 tbsp sugar (for strawberries)

1 package (8 oz) cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream

8 to 10 store-bought ladyfingers or sponge cake sheets

1 cup whipped cream (for topping)

Fresh mint leaves (for garnish)

Instructions

Prepare the Strawberries: In a bowl, combine the sliced strawberries and 1 tablespoon of sugar. Stir gently and let sit for about 15 minutes to macerate. This will enhance the strawberries' flavor and create a little syrup.

Make the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract using an electric mixer until smooth and creamy.

Whip the Cream: In a separate bowl, pour the heavy whipping cream and whip it until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.

Assemble the Rolls: Lay out the ladyfingers or sponge cake sheets on a clean surface. Spread a generous layer of the cheesecake filling over each piece, leaving a small border around the edges. Add a few slices of the macerated strawberries on top of the filling.

Roll Them Up: Carefully roll each ladyfinger or sponge cake piece tightly, like a sushi roll, and place the rolls seam-side down on a serving plate.

Chill: Cover the rolls with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld and the cheesecake to firm up.

Serve: Before serving, slice each roll into 1-inch pieces. Top with a dollop of whipped cream and garnish with additional strawberry slices and fresh mint leaves.

Enjoy your delightful Strawberry Shortcake Cheesecake Rolls!
