Ingredients

For the crust:

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

For the cheesecake filling:

24 oz cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

For the strawberry topping:

2 cups fresh strawberries, sliced

½ cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch (optional, for thickening)

For garnish:

Whipped cream (optional)

Fresh mint leaves (optional)

Instructions

Preheat the Oven: Preheat your oven to 325°F (160°C).

Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated with butter. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let it cool while you prepare the cheesecake filling.

Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese and granulated sugar with an electric mixer until smooth and creamy. Add the vanilla extract and mix well. Add the eggs, one at a time, beating well after each addition. Finally, mix in the sour cream until fully combined.

Bake the Cheesecake: Pour the cheesecake mixture over the cooled crust. Smooth the top with a spatula. Bake for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for about 1 hour. This will help prevent cracking.

Prepare the Strawberry Topping: In a medium bowl, combine the sliced strawberries, sugar, and lemon juice. If you prefer a thicker sauce, mix in the cornstarch. Let the mixture sit for about 15-20 minutes. This allows the strawberries to release their juices, creating a delicious syrup.

Assemble the Dessert: Once the cheesecake has cooled entirely (preferably refrigerate for at least 4 hours or overnight), remove it from the springform pan. Spread the strawberry topping evenly over the cheesecake.

Serve: Slice the cheesecake and serve chilled, optionally topped with whipped cream and fresh mint leaves for garnish. Enjoy your delightful Strawberry Shortcake Cheesecake!
