1 pint vanilla ice cream, softened

1 pint strawberry ice cream, softened

12-14 strawberry shortcake cookies (store-bought or homemade)

2 cups fresh strawberries, hulled and sliced

1 cup whipped cream (heavy cream whipped to soft peaks)

½ cup powdered sugar

1 teaspoon pure vanilla extract

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Pan: Line the bottom of an 8-inch springform pan with parchment paper and lightly grease the sides.

    Layer the Base: Start by placing a layer of strawberry shortcake cookies at the bottom of the pan, breaking them if necessary to fill any gaps.

      First Ice Cream Layer: Spoon half of the softened vanilla ice cream over the cookies, spreading it into an even layer. Use a spatula to smooth the top. Freeze for about 30 minutes to firm up.
