4 medium zucchini

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup cherry tomatoes, diced

1/2 cup cooked spinach, chopped (frozen and thawed is fine)

1 clove garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil for garnish (optional)

Olive oil for drizzling

    Prepare Zucchini: Slice the zucchini in half lengthwise and scoop out the center with a spoon to create a “boat.” Leave about 1/4 inch of the flesh to maintain the structure.

      Make Filling: In a mixing bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese, diced tomatoes, chopped spinach, minced garlic, Italian seasoning, salt, and pepper. Mix thoroughly until well blended.

        Stuff the Boats: Spoon the cheese mixture evenly into the hollowed-out zucchini halves. Ensure they are generously filled.
