6 slices of brioche bread

4 oz cream cheese, softened

1/4 cup powdered sugar

1 tsp vanilla extract

2 large eggs

1/4 cup milk

1/2 tsp ground cinnamon

1/4 tsp salt

1 tbsp butter (for cooking)

Maple syrup (for serving)

Fresh berries (for garnish)

Instructions
 

Begin by preparing the filling: In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy. Set aside.

    Cut each slice of brioche bread into quarters, creating bite-sized pieces.

      Take one quarter of bread and spread about a teaspoon of the cream cheese mixture on it. Top with another bread piece, forming a sandwich. Repeat this step for all pieces.

        In a separate bowl, whisk together the eggs, milk, cinnamon, and salt until well combined.

          Heat a skillet or griddle over medium heat and add the butter, allowing it to melt and coat the surface.

            Dip each stuffed bread sandwich into the egg mixture, ensuring both sides are well-coated, then place in the skillet. Cook for 2-3 minutes on each side or until golden brown. Repeat with remaining bites.

              Remove from heat and allow to cool slightly. Dust with additional powdered sugar if desired.
