Ingredients
  

1 lb ground beef or turkey

1 cup uncooked rice (white or brown)

1 can (15 oz) diced tomatoes with herbs

1 cup bell peppers, diced (mix of red, yellow, and green for color)

1 small onion, diced

2 cloves garlic, minced

2 cups beef or vegetable broth

1 tsp Italian seasoning

1 tsp paprika

Salt and black pepper to taste

1 cup shredded cheese (cheddar or mozzarella)

Fresh parsley or basil for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    Brown the meat: In a large skillet over medium heat, add the ground beef or turkey. Cook until it's browned, breaking it apart with a spatula. Drain excess fat if necessary.

      Sauté vegetables: Add the diced onion and minced garlic to the skillet. Sauté until the onion becomes translucent.

        Combine ingredients: Stir in the diced bell peppers, uncooked rice, diced tomatoes (with juice), broth, Italian seasoning, paprika, salt, and pepper. Mix well until everything is combined.

          Transfer to casserole dish: Pour the mixture into a greased 9x13-inch casserole dish. Spread it out evenly.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 35-40 minutes, or until the rice is fully cooked and has absorbed most of the liquid.

              Add cheese: Remove the foil, sprinkle the shredded cheese on top, and bake uncovered for an additional 10-15 minutes, until the cheese is melted and bubbly.

                Garnish and serve: Once it's done, take it out of the oven and let it sit for a few minutes. Garnish with freshly chopped parsley or basil before serving.
