Ingredients

1 ½ cups sugar cookie dough (store-bought or homemade)

2 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

½ cup sour cream

1 tablespoon all-purpose flour

Pinch of salt

1 cup whipped cream (for topping)

Sprinkles (for garnish, optional)

Instructions

Preheat the Oven: Preheat your oven to 325°F (160°C).

Prepare Crust: Press the sugar cookie dough evenly into the bottom of a 9-inch springform pan to create the base. Bake it in the preheated oven for about 10-12 minutes or until lightly golden. Remove from the oven and let it cool slightly.

Make Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add granulated sugar and continue mixing until well combined.

Add Flavors: Mix in the vanilla extract, then add the eggs one at a time, ensuring each is fully incorporated before adding the next. Scrape down the sides of the bowl as needed.

Incorporate Sour Cream: Gently fold in the sour cream, flour, and a pinch of salt. Mix until the batter is well combined and smooth.

Combine: Pour the cheesecake filling over the cooled cookie crust in the springform pan, spreading it out evenly.

Bake: Bake the cheesecake in the oven at 325°F (160°C) for about 45-50 minutes or until the center is slightly jiggly and the edges are set.

Cooling: Once out of the oven, allow the cheesecake to cool at room temperature for about an hour, then refrigerate for at least 4 hours, or preferably overnight, to set properly.

Serve: Before serving, top the cheesecake with whipped cream and sprinkle some colorful sprinkles on top for an extra festive touch.

Enjoy: Carefully slice the cheesecake using a hot knife (run it under hot water for a clean cut) and enjoy this delightful dessert!
