1 cup all-purpose flour

1/2 cup rolled oats

1/2 cup brown sugar

1/4 cup granulated sugar

1/2 tsp baking powder

1/4 tsp baking soda

1/4 tsp salt

1/2 cup unsalted butter, melted

1 large egg

1 tsp vanilla extract

Zest of 1 lemon

1 cup fresh blueberries

2 tbsp lemon juice

Instructions
 

Preheat your oven to 350°F (175°C). Grease an 8-inch square baking pan or line it with parchment paper for easy removal.

    In a large mixing bowl, combine the flour, rolled oats, brown sugar, granulated sugar, baking powder, baking soda, and salt. Mix until evenly combined.

      In another bowl, whisk together the melted butter, egg, vanilla extract, lemon zest, and lemon juice.

        Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the fresh blueberries, being careful not to crush them.

          Spread the batter evenly in the prepared baking pan, smoothing the top with a spatula. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

            Once baked, let the bars cool in the pan for about 15 minutes before transferring them to a wire rack to cool completely.

              Once cooled, cut into squares and serve. Enjoy these delightful summer treats with a glass of lemonade or your favorite summer drink!
