For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup sugar

½ teaspoon cinnamon

For the cheesecake filling:

24 oz cream cheese, softened

1 cup sugar

1 teaspoon vanilla extract

3 large eggs

1 tablespoon lemon juice

1 cup sour cream

1 cup fresh peaches, diced

1 cup assorted berries (strawberries, blueberries, raspberries)

For the berry topping:

1 cup mixed berries (fresh or frozen)

2 tablespoons sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

1 tablespoon water

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.

    Make the Crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, sugar, and cinnamon. Stir until well mixed. Press the mixture firmly into the bottom of the prepared springform pan, ensuring it is even. Bake for 10 minutes, then remove from the oven and allow to cool.

      Prepare the Filling: In a large bowl, beat the softened cream cheese until smooth. Gradually add in the sugar and mix until well combined. Add the vanilla extract, lemon juice, and sour cream, mixing until smooth.

        Add Eggs: Add the eggs one at a time, mixing well after each addition. Fold in the diced peaches and mixed berries gently with a spatula.

          Combine & Bake: Pour the cheesecake filling over the pre-baked crust. Tap the pan gently on the counter to remove any air bubbles. Bake in the preheated oven for 60-70 minutes, or until the center is set but still slightly jiggly.

            Cool & Refrigerate: Turn off the oven, crack the door open, and let the cheesecake cool in the oven for about an hour. Once cooled, refrigerate for at least 4 hours or overnight to allow it to set completely.

              Prepare the Berry Topping: In a small saucepan, combine the mixed berries, sugar, lemon juice, cornstarch, and water. Cook over medium heat, stirring gently until the mixture bubbles and thickens. Remove from heat and allow to cool.

                Serve: Once the cheesecake is fully chilled, carefully remove it from the springform pan. Top with the berry mixture before slicing and serving.
