For the crust:

1 ½ cups all-purpose flour

½ cup powdered sugar

½ cup unsalted butter, softened

1 egg yolk

1 teaspoon vanilla extract

Pinch of salt

For the pastry cream:

2 cups whole milk

½ cup granulated sugar

4 large egg yolks

¼ cup cornstarch

2 tablespoons unsalted butter

1 teaspoon vanilla extract

For the topping:

1 cup strawberries, sliced

1 cup kiwis, peeled and sliced

1 cup blueberries

1 cup peaches, sliced

½ cup apricot jam (for glaze)

Instructions
 

Make the crust: In a mixing bowl, combine the flour, powdered sugar, and salt. Cut in the softened butter until the mixture resembles coarse crumbs. Stir in the egg yolk and vanilla extract until a dough forms. Press the dough into a tart pan, covering the bottom and sides evenly. Prick the base with a fork.

    Bake the crust: Preheat the oven to 350°F (175°C). Bake the crust for 20-25 minutes or until golden brown. Remove from the oven and let it cool.

      Prepare the pastry cream: In a saucepan, heat the milk and half the sugar over medium heat until it begins to steam. In a separate bowl, whisk the egg yolks, remaining sugar, and cornstarch until smooth. Slowly pour the hot milk into the yolk mixture, whisking continuously. Return the mixture to the saucepan and cook over medium heat, stirring constantly until it thickens. Remove from heat, whisk in butter and vanilla extract. Let it cool.

        Assemble the tart: Once the crust and pastry cream have cooled, spread the pastry cream evenly over the crust. Arrange the sliced fruits artistically on top of the cream.

          Glaze the tart: In a small saucepan, warm the apricot jam over low heat until it melts. Brush the glaze over the fruits gently to give them a shiny finish.

            Chill and serve: Refrigerate the tart for at least 1 hour before serving to allow it to set. Slice and enjoy at your summer birthday party!
