Ingredients

1 lb boneless, skinless chicken breast, cut into 1-inch cubes

1 orange, juiced and zested

1 lemon, juiced and zested

2 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 teaspoon salt

1/2 teaspoon black pepper

1 bell pepper (any color), cut into 1-inch pieces

1 red onion, cut into 1-inch pieces

Wooden skewers (soaked in water for 30 minutes)

Instructions

Marinate the Chicken: In a large bowl, mix the orange juice, lemon juice, orange zest, lemon zest, olive oil, minced garlic, rosemary, thyme, salt, and pepper. Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Prepare Skewers: Once marinated, thread the chicken, bell pepper, and red onion alternately onto the soaked wooden skewers.

Preheat the Grill: Preheat your grill to medium-high heat. Ensure the grill grates are clean and lightly oiled to prevent sticking.

Grill the Skewers: Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. It should reach an internal temperature of 165°F (75°C).

Serve: Remove the skewers from the grill and let them rest for a few minutes. Serve hot, garnished with fresh herbs or a sprinkle of extra zest for extra flavor. Pair with a simple side salad or grilled vegetables for a complete summer dinner.
