Ingredients
  

4 ears of fresh sweet corn, husked

1 cup cherry tomatoes, halved

1 medium red bell pepper, diced

1 small red onion, finely chopped

1 cup cucumber, diced

½ cup fresh cilantro, chopped

1 lime, juiced

3 tablespoons olive oil

Salt and pepper to taste

Feta cheese (optional, for topping)

Instructions
 

Bring a large pot of water to a boil. Add the husked corn and cook for about 4-5 minutes until the kernels are tender. Remove the corn from the water and let it cool.

    Once the corn is cool, carefully cut the kernels off the cob, using a sharp knife and slicing downward into a bowl.

      In a large mixing bowl, combine the corn kernels, cherry tomatoes, red bell pepper, red onion, cucumber, and chopped cilantro.

        In a small bowl, whisk together the lime juice, olive oil, salt, and pepper to create a dressing.

          Pour the dressing over the corn and vegetable mixture, tossing gently to combine.

            Allow the salad to chill in the refrigerator for at least 30 minutes for the flavors to meld.

              Before serving, give it another good toss and sprinkle with feta cheese if desired.
