Ingredients
  

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

1 orange, juiced and zested

1 lemon, juiced and zested

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon fresh rosemary, finely chopped

1 teaspoon fresh thyme, finely chopped

Salt and pepper to taste

1 red bell pepper, cut into 1-inch squares

1 yellow bell pepper, cut into 1-inch squares

Wooden or metal skewers

Instructions
 

In a large bowl, combine the orange juice, lemon juice, olive oil, minced garlic, orange zest, lemon zest, rosemary, thyme, salt, and pepper. Whisk together until well mixed.

    Add the chicken cubes to the marinade, cover, and refrigerate for at least 30 minutes (up to 2 hours for more flavor).

      While the chicken is marinating, soak wooden skewers in water for at least 20 minutes to prevent burning.

        Preheat your grill to medium-high heat.

          Thread the marinated chicken and bell pepper pieces alternately onto the skewers. Leave a little space between each item to ensure even cooking.

            Place the skewers on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

              Remove skewers from the grill and let them rest for a couple of minutes before serving.

                Serve warm, garnished with fresh herbs or additional citrus slices if desired.
