Ingredients
  

4 cups fresh kale, stems removed and chopped

2 ripe peaches, sliced

1 cup fresh blueberries

1/4 cup red onion, thinly sliced

1/4 cup feta cheese, crumbled (optional)

1/4 cup walnuts, roughly chopped

3 tablespoons olive oil

1 tablespoon apple cider vinegar

1 teaspoon honey

Salt and pepper to taste

Instructions
 

In a large bowl, massage the chopped kale with a pinch of salt for about 2-3 minutes until it becomes tender and bright green.

    Add the sliced peaches, blueberries, red onion, feta cheese, and walnuts to the kale.

      In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined.

        Drizzle the dressing over the salad and toss gently to incorporate all the ingredients.
