4 boneless, skinless chicken breasts

1/4 cup olive oil

3 tablespoons fresh lemon juice

2 teaspoons lemon zest

2 teaspoons dried oregano

2 teaspoons dried thyme

3 cloves garlic, minced

Salt and pepper, to taste

1 zucchini, sliced

1 bell pepper (any color), diced

1 cup cherry tomatoes, halved

1 red onion, cut into wedges

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a large bowl, combine olive oil, lemon juice, lemon zest, oregano, thyme, minced garlic, salt, and pepper. Add chicken breasts and coat well. Cover and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Prepare the Veggie Medley: While the chicken marinates, preheat your grill to medium-high heat. In a separate bowl, toss the zucchini, bell pepper, cherry tomatoes, and red onion with a drizzle of olive oil, salt, and pepper.

      Grill the Chicken: Remove chicken from the marinade and place on the grill. Cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is no longer pink in the center.

        Grill the Vegetables: While the chicken is grilling, add the vegetable medley to a grill basket or place directly on the grill. Grill for about 8-10 minutes until they are soft and slightly charred, stirring occasionally.

          Serve: Once the chicken is cooked, remove it from the grill and let it rest for a few minutes. Slice the chicken and serve it alongside the grilled summer vegetables. Garnish with fresh parsley.
