Ingredients
  

1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

2 medium zucchinis, sliced into thick rounds

1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1 red onion, cut into wedges

1 cup cherry tomatoes

1/4 cup olive oil

Juice and zest of 1 large lemon

3 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

Salt and pepper to taste

Wooden or metal skewers (if using wooden skewers, soak in water for 30 min before use)

Instructions
 

Marinate the Chicken: In a large bowl, combine the olive oil, lemon juice, lemon zest, garlic, rosemary, thyme, salt, and pepper. Add the chicken cubes and toss to coat well. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for best flavor.

    Prepare the Veggies: In another bowl, combine the zucchini, bell peppers, red onion, and cherry tomatoes. Drizzle with a little olive oil, sprinkle with salt and pepper, and toss gently to coat.

      Assemble the Skewers: Thread the marinated chicken and vegetables onto the skewers, alternating between chicken and veggies until all ingredients are used.

        Preheat the Grill: Heat your grill to medium-high heat, about 375°F - 400°F (190°C - 204°C).

          Grill the Skewers: Place the skewers on the grill. Cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C) and the veggies are tender and lightly charred.

            Serve: Remove the skewers from the grill and let them rest for a couple of minutes. Serve hot, garnished with additional fresh herbs and lemon wedges if desired.
