Ingredients
  

1 cup quinoa, rinsed

2 cups water or vegetable broth

1 cup cherry tomatoes, halved

1/2 cucumber, diced

1/4 red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

2 tablespoons olive oil

1 tablespoon red wine vinegar

Salt and pepper to taste

Instructions
 

In a medium saucepan, combine quinoa and water (or vegetable broth). Bring to a boil, then cover, reduce heat, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let sit for 5 minutes, then fluff with a fork.

    In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.

      Once the quinoa has cooled slightly, add it to the mixing bowl with the other ingredients.

        In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper. Pour the dressing over the quinoa salad and toss gently to combine until well mixed.

          Adjust seasoning if necessary and let the salad sit for at least 10 minutes for flavors to meld.

            Serve chilled or at room temperature.
