Ingredients
  

1 cup summer sausage, sliced into half-moons

1 cup Andouille sausage, diced

1 medium yellow onion, chopped

2 cloves garlic, minced

1 cup bell peppers (mixed colors), diced

1 cup zucchini, diced

1 cup corn kernels (fresh, frozen, or canned)

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the Pan: In a large skillet, heat the olive oil over medium heat.

    Sauté the Sausages: Add the summer sausage and Andouille sausage to the skillet. Sauté for about 5-7 minutes, until they are browned and slightly crispy. Remove the sausages from the skillet and set them aside.

      Cook the Vegetables: In the same skillet, add the chopped onion and garlic. Sauté until the onions are translucent, about 3-4 minutes.

        Add Bell Peppers and Zucchini: Stir in the diced bell peppers and zucchini. Cook for another 5 minutes until the vegetables soften.

          Incorporate Corn and Spices: Add the corn kernels, smoked paprika, dried thyme, and the sautéed sausages back into the skillet. Mix everything well and season with salt and pepper to taste.

            Cook Together: Let the mixture cook for an additional 5-7 minutes, allowing the flavors to meld together.

              Garnish and Serve: Remove from heat, sprinkle with fresh parsley, and serve hot.
