1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

1/4 cup olive oil

Juice and zest of 1 lemon

3 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 teaspoon salt

1/2 teaspoon black pepper

1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1 red onion, cut into wedges

Skewers (soaked in water if wooden)

Instructions
 

In a large bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, rosemary, thyme, salt, and pepper to create a marinade.

    Add the cubed chicken to the marinade and coat well. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

      Preheat your grill to medium-high heat.

        Thread the marinated chicken onto skewers, alternating with pieces of bell pepper and onion for a colorful presentation.

          Place the skewers on the hot grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

            Remove the skewers from the grill and let them rest for a couple of minutes before serving.

              Serve hot with a side of fresh summer salad or grilled vegetables.
