For the Meatballs:

1 pound ground beef

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

1 clove garlic, minced

1 egg, beaten

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon Italian seasoning

For the Sweet and Sour Sauce:

1 cup pineapple juice

1/2 cup rice vinegar

1/2 cup brown sugar

1/4 cup soy sauce

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

1 bell pepper, sliced (red or green)

1 onion, sliced

1 tablespoon vegetable oil

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Make the Meatballs: In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, garlic, beaten egg, salt, pepper, and Italian seasoning. Mix until well combined. Form the mixture into 1- to 1.5-inch meatballs and place them on a baking sheet lined with parchment paper.

      Bake the Meatballs: Bake the meatballs in the preheated oven for 20-25 minutes, or until they are cooked through and browned.

        Prepare the Sauce: In a medium saucepan, combine pineapple juice, rice vinegar, brown sugar, and soy sauce. Bring to a simmer over medium heat while stirring until the sugar dissolves.

          Thicken the Sauce: Once simmering, add the cornstarch mixture to the sauce while whisking continuously. Cook for an additional 2-3 minutes until the sauce thickens.

            Sauté the Vegetables: In a skillet, heat vegetable oil over medium-high heat. Add sliced bell pepper and onion, sautéing for about 5 minutes until they are tender.

              Combine: Add the baked meatballs to the skillet with sautéed vegetables and pour the sweet and sour sauce over the top. Stir gently to coat all the meatballs and vegetables in the sauce. Cook for an additional 5 minutes to heat everything through.

                Serve: Serve the sweet and sour meatballs over rice or noodles, garnished with extra parsley if desired.
