Sweet Banana Nut Bagel

2 ripe bananas, mashed

2 tablespoons honey or maple syrup

1/3 cup creamy peanut butter or almond butter

1 teaspoon vanilla extract

1 cup whole wheat bagel flour (or all-purpose flour for a lighter option)

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon cinnamon

1/2 cup chopped walnuts or pecans

Pinch of salt

Optional: extra banana slices and nuts for topping

Instructions
 

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the mashed bananas, honey (or maple syrup), peanut butter, and vanilla extract. Mix until smooth and well combined.

      In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.

        Gradually add the dry ingredients to the banana mixture, stirring until just combined. Be careful not to overmix.

          Fold in the chopped walnuts or pecans to the dough until evenly distributed.

            Divide the dough into even portions and shape each portion into a bagel shape, making sure to create a hole in the center.

              Place the formed bagels onto the prepared baking sheet, spacing them evenly apart.

                (Optional) Top each bagel with additional banana slices and nuts for added texture and flavor.

                  Bake in the preheated oven for 20-25 minutes, or until the bagels are golden brown and firm to the touch.

                    Once baked, remove the bagels from the oven and let them cool slightly on a wire rack before serving.
