1 lb chicken thighs, boneless and skinless, cut into bite-sized pieces

1 cup jasmine rice

1 1/2 cups water or chicken broth

1/4 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 tablespoon vegetable oil

2 garlic cloves, minced

1 inch ginger, grated

1 bell pepper, sliced (any color)

1 cup snap peas

1/4 cup green onions, chopped

1 tablespoon sesame seeds (for garnish)

Salt and pepper to taste

Lime wedges (for serving)

Instructions
 

Cook the Rice: In a pot, combine jasmine rice and water (or chicken broth) over medium-high heat. Once it boils, cover, reduce heat to low, and simmer for about 15 minutes until the rice is cooked and the liquid is absorbed. Fluff with a fork and set aside.

    Prepare the Chicken Marinade: In a medium bowl, mix sweet chili sauce, soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger. Add the chicken pieces, ensuring they are well-coated. Let them marinate for at least 15 minutes.

      Stir-fry the Chicken: In a large skillet or wok, heat vegetable oil over medium-high heat. Add marinated chicken and stir-fry for about 5-6 minutes or until golden brown and fully cooked. If desired, add salt and pepper to taste.

        Cook the Vegetables: Add the sliced bell pepper and snap peas to the skillet. Stir-fry for an additional 3-4 minutes until the vegetables are tender-crisp.

          Assemble the Bowls: Divide the cooked rice among serving bowls. Top with the sweet chili chicken and vegetable mixture.

            Garnish and Serve: Sprinkle chopped green onions and sesame seeds over the top for garnish. Serve with lime wedges on the side for an extra burst of flavor.
