Ingredients

1 pound large shrimp, peeled and deveined

1 bunch asparagus, trimmed and cut into 2-inch pieces

2 tablespoons olive oil

1/4 cup sweet chili sauce

2 tablespoons soy sauce

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

Salt and pepper to taste

2 teaspoons sesame seeds (optional)

Fresh cilantro or green onions for garnish (optional)

Instructions

Prepare the Shrimp: In a medium bowl, toss the shrimp with half of the sweet chili sauce, soy sauce, garlic, ginger, salt, and pepper. Let this marinate for at least 15 minutes while you prepare the asparagus.

Cook the Asparagus: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the asparagus pieces and sauté for about 3-4 minutes until they are vibrant green and tender-crisp. Remove asparagus from the skillet and set aside.

Cook the Shrimp: In the same skillet, add the remaining tablespoon of olive oil. Add the marinated shrimp and cook for 2-3 minutes on one side, until pink and opaque, then flip and cook for another 1-2 minutes on the other side.

Combine Everything: Once the shrimp are cooked through, return the asparagus to the skillet. Pour in the remaining sweet chili sauce and toss everything together for an additional minute, ensuring the shrimp and asparagus are well coated.

Serve: Remove from heat, sprinkle with sesame seeds if desired, and garnish with fresh cilantro or chopped green onions. Serve warm over rice or quinoa for a complete meal.
