Ingredients

2 cups raw pecan halves

1/2 cup granulated sugar

1/4 cup light brown sugar, packed

1 teaspoon cayenne pepper (adjust for heat preference)

1 teaspoon smoked paprika

1 teaspoon cinnamon

1/2 teaspoon salt

1/4 cup unsalted butter, melted

1 teaspoon vanilla extract

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.

Combine Dry Ingredients: In a medium bowl, mix together the granulated sugar, brown sugar, cayenne pepper, smoked paprika, cinnamon, and salt until well combined.

Prepare the Pecans: In a large bowl, pour the melted butter and vanilla extract over the raw pecans, stirring to coat them evenly.

Mix Pecans with Sugar Mixture: Sprinkle the sugar and spice mixture over the buttery pecans and toss to ensure all the pecans are well coated.

Spread on Baking Sheet: Spread the coated pecans in a single layer on the prepared baking sheet. Make sure they are spaced out to achieve an even roast.

Bake the Pecans: Place the baking sheet in the preheated oven and bake for 15-20 minutes, stirring every 5 minutes to ensure even cooking and to prevent burning. Keep an eye on them; they should be golden brown and fragrant.

Cool and Serve: Once roasted to your liking, remove the pecans from the oven and allow them to cool on the baking sheet for about 10 minutes. They will continue to harden as they cool.

Enjoy: Once cooled, enjoy your Sweet Heat Pecans as a snack, salad topping, or a delightful addition to a charcuterie board!
