1 cup mashed sweet potatoes (about 1 large sweet potato)

1 cup cornmeal

1 cup all-purpose flour

1/4 cup sugar (adjust to taste)

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup buttermilk (or milk with 1 tablespoon vinegar)

1/4 cup vegetable oil (or melted coconut oil)

2 large eggs

1 cup corn kernels (fresh, frozen, or canned)

1 teaspoon vanilla extract

Optional: 1 teaspoon ground cinnamon or nutmeg for added flavor

Instructions
 

Preheat your oven to 400°F (200°C) and grease a 9x9-inch baking dish or line it with parchment paper for easy removal.

    Begin by prepping the sweet potato: peel, chop, and boil or steam it until tender, then mash it well. You should have about 1 cup of mashed sweet potato.

      In a large mixing bowl, combine the cornmeal, all-purpose flour, sugar, baking powder, baking soda, salt, and cinnamon (if using). Whisk together until well mixed.

        In another bowl, whisk together the mashed sweet potato, buttermilk, vegetable oil, eggs, and vanilla extract until smooth.

          Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; some lumps are okay.

            Gently fold in the corn kernels until evenly distributed.

              Pour the batter into the prepared baking dish and smooth the top with a spatula.

                Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

                  Once done, remove the bars from the oven and let them cool in the pan for about 10 minutes. Then, transfer to a wire rack to cool completely.

                    Cut into squares or bars and serve warm or at room temperature. Enjoy your sweet potato cornbread bars as a snack or a lovely side dish!
