Ingredients
  

1 cup fresh ricotta cheese

2 tablespoons honey, plus extra for drizzling

1 teaspoon fresh thyme leaves (plus extra for garnish)

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1/4 cup shelled pistachios, roughly chopped

1 tablespoon olive oil

1/2 teaspoon lemon zest

Fresh baguette or crackers, for serving

Instructions
 

Preheat your oven to 375°F (190°C).

    In a medium mixing bowl, combine the ricotta cheese, honey, fresh thyme, sea salt, and black pepper. Mix until well blended.

      Transfer the ricotta mixture to an oven-safe dish, smoothing the top with a spatula.

        Drizzle the olive oil evenly over the ricotta mixture.

          Sprinkle the chopped pistachios and lemon zest on top.

            Bake in the preheated oven for 20-25 minutes, or until the edges are slightly golden and the cheese is warm and soft.

              Remove from the oven and let it cool for a few minutes. Drizzle with additional honey and garnish with extra thyme leaves before serving.

                Serve warm with slices of fresh baguette or a variety of crackers for dipping.
