Ingredients
  

2 ripe mangoes, peeled and julienned

1 cup shredded carrots

1 red bell pepper, thinly sliced

1/2 cup red cabbage, thinly sliced

1/4 cup fresh cilantro, chopped

1/4 cup green onions, sliced

1/4 cup roasted peanuts, crushed (optional)

1/2 cup cherry tomatoes, halved

1 small red chili, finely chopped (adjust for spice preference)

Juice of 2 limes

2 tablespoons fish sauce

1 tablespoon soy sauce

1 tablespoon honey or maple syrup

1 tablespoon sesame oil

Salt, to taste

Instructions
 

In a large mixing bowl, combine the julienned mangoes, shredded carrots, sliced red bell pepper, and thinly sliced red cabbage.

    Add the chopped cilantro, sliced green onions, and halved cherry tomatoes to the bowl.

      In a small bowl, whisk together the juice of 2 limes, fish sauce, soy sauce, honey (or maple syrup), and sesame oil to create the dressing. Adjust the sweetness or saltiness to taste.

        Pour the dressing over the salad and toss gently to combine all the ingredients well.

          Add the finely chopped red chili for that extra kick, and toss again.

            Let the salad sit for about 10 minutes for the flavors to meld together.

              Just before serving, sprinkle crushed roasted peanuts on top for an added crunch (if using) and serve chilled.
