Ingredients
  

2 cups elbow macaroni

1 pound ground beef or turkey

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning (about 1 ounce)

1 can (14.5 oz) diced tomatoes with green chilies

1 cup beef or chicken broth

1 cup shredded cheddar cheese

1 cup shredded pepper jack cheese

1/2 cup sour cream

Salt and pepper, to taste

Optional toppings: sliced jalapeños, chopped cilantro, diced tomatoes, sliced black olives, crushed tortilla chips

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Meat: In a large skillet, heat olive oil over medium heat. Add diced onion and cook until translucent, about 3-4 minutes. Add garlic and cook for an additional minute until fragrant.

      Add Meat and Seasoning: Add the ground beef or turkey to the skillet, breaking it up with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary. Sprinkle in the taco seasoning and stir to combine.

        Mix in Tomatoes and Broth: Pour in the diced tomatoes with green chilies and the broth. Bring the mixture to a simmer and let it cook for about 5 minutes, allowing the flavors to meld together.

          Combine with Macaroni: Stir in the cooked elbow macaroni. Mix well to coat the pasta with the meat sauce.

            Add Cheese and Sour Cream: Reduce the heat to low. Mix in the cheddar cheese, pepper jack cheese, and sour cream until everything is melted and creamy. Season with salt and pepper to taste.

              Serve: Spoon the Taco Mac into bowls and garnish with your choice of toppings such as sliced jalapeños, chopped cilantro, diced tomatoes, sliced black olives, or crushed tortilla chips for added crunch.
