Tasty Crockpot Frito Chili Pie

1 pound ground beef (or turkey)

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 can (6 oz) tomato paste

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

2 cups beef or vegetable broth

4 cups Fritos corn chips

2 cups shredded cheese (cheddar or a blend)

1 cup sour cream (optional)

1 jalapeño, sliced (optional)

Fresh cilantro for garnish (optional)

Instructions
 

Brown the Meat: In a skillet over medium heat, add the ground beef (or turkey) along with the diced onion. Cook until the meat is browned and the onion is translucent. Stir in the minced garlic and cook for an additional minute. Drain excess fat if necessary.

    Combine Ingredients in the Crockpot: Transfer the browned meat and onions into a crockpot. Add the kidney beans, black beans, diced tomatoes with green chilies, tomato paste, chili powder, cumin, smoked paprika, salt, and pepper. Pour in the broth and stir until all ingredients are well combined.

      Cook the Chili: Cover the crockpot with the lid. Cook on low for 6-8 hours or high for 3-4 hours, until the chili is heated through and flavors are melded together.

        Assemble the Frito Chili Pie: In individual serving bowls, layer Fritos at the bottom, then spoon the warm chili over the chips. Top with shredded cheese, a dollop of sour cream, sliced jalapeños, and a sprinkle of fresh cilantro if desired.
