For the Rhubarb Filling:

2 cups fresh rhubarb, chopped into small pieces

1 cup granulated sugar

1 tablespoon cornstarch

1 teaspoon vanilla extract

1 tablespoon lemon juice

For the Crust and Crumble Topping:

1 ½ cups all-purpose flour

¾ cup rolled oats

¾ cup brown sugar, packed

½ teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, cold and cubed

1 large egg, beaten

Instructions
 

Prepare the Rhubarb Filling:

    - In a medium saucepan, combine the chopped rhubarb, granulated sugar, cornstarch, vanilla extract, and lemon juice.

      - Cook over medium heat, stirring occasionally, until the rhubarb begins to break down and release its juices, about 5-7 minutes.

        - Remove from heat and let cool slightly.

          Make the Crust and Crumble Topping:

            - Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish or line it with parchment paper.

              - In a large mixing bowl, whisk together flour, oats, brown sugar, baking powder, baking soda, and salt.

                - Add the cold, cubed butter to the dry ingredients and mix until it resembles coarse crumbs.

                  - Reserve 1 cup of this mixture to use as the crumble topping.

                    - Stir in the beaten egg until the mixture clumps together.

                      Assemble the Bars:

                        - Press the remaining mixture firmly and evenly into the bottom of the prepared baking dish to form the crust.

                          - Spread the rhubarb filling evenly over the crust.

                            - Sprinkle the reserved crumble topping over the rhubarb layer, making sure to cover it evenly.

                              Bake the Bars:

                                - Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the filling is bubbly.
